Black Bean and Rice Burgers

Create flavorful Southwest black bean and rice burgers, topped with creamy sour cream and zesty salsa for a delicious meat-free alternative.
Ingredients:
  • 1 can (15 oz) Progresso™ black beans, drained, rinsed
  • 1 cup cooked rice
  • 1 small onion, finely chopped (1/4 cup)
  • 2 tablespoons salsa
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • 4 hamburger buns, split
  • Lettuce leaf
Instructions:
  • Combine mashed beans, rice, onion, and 2 tablespoons of salsa.
  • Coat a 10-inch skillet generously with cooking spray and heat over medium-high heat. Drop 1/2 cup portions of the bean mixture into the skillet and press them down to 1/2 inch thickness. Cook each patty for 4 to 5 minutes on both sides until nicely browned. Transfer the cooked patties from the skillet, cover to keep warm, and repeat with the remaining mixture.
  • Combine sour cream and 1/4 cup salsa, then spread onto buns. Add burgers and lettuce on top.
