Savory black-eyed peas and rice with ham, bell peppers, onion, garlic, paprika, and bay leaves - perfect for a flavorful New Year's Day feast.
Ingredients:
  • 1 cup dried black-eyed peas
  • 1 cup lean diced ham
  • 0.5 cup chopped green bell pepper
  • 1 clove garlic, minced
  • 2 pinches paprika, or more to taste
  • 3 cups cooked rice
Instructions:
  • In a large container, soak black-eyed peas in cool water, ensuring they are covered by several inches. Allow them to stand for 8 hours or overnight. Drain and rinse well before using.
  • In a pot over medium heat, sizzle ham in olive oil until nicely browned, around 5 minutes. Stir in onion, green bell pepper, and garlic, cooking until onion is soft, for about 10 minutes. Toss in black-eyed peas, water, bay leaves, paprika, salt, and black pepper. Cover with a lid and gently simmer until peas are tender, for 40 to 50 minutes. Enjoy the flavors melding beautifully!
  • Discard bay leaves from the black-eyed peas mixture and fold in the rice. Allow to simmer until all the liquid has evaporated, for an additional 5 to 10 minutes.
