Refreshing summer salad with blackberries, crisp almonds, and creamy feta.
Ingredients:
  • 1 serving cooking spray
  • 0.5 cup toasted unsalted almonds
  • 2 tablespoons light corn syrup
  • 1 head romaine lettuce, torn into bite-size pieces
  • 1 pint fresh blackberries
  • 0.5 cup crumbled low-fat feta cheese
  • 3 tablespoons lemon juice
  • 2.5 tablespoons extra-virgin olive oil
Instructions:
  • Coat a baking sheet with cooking spray.
  • Crush almonds with a mortar and pestle or a rolling pin until they are smaller pieces.
  • Spread almonds in a large skillet over high heat and add corn syrup. Stir gently to coat almonds in the syrup, cooking for 2 to 3 minutes until they are evenly coated. Transfer almonds to a baking sheet to cool and harden.
  • Combine crispy lettuce, juicy blackberries, and creamy feta cheese in a generously sized bowl.
  • Combine lemon juice and olive oil in a small bowl, whisking until blended. Stir in sesame oil to finish the dressing.
  • Roughly chop cooled almonds and toss them into the salad along with the dressing.
