Prosciutto and cheese rolled chicken skewers with fragrant rosemary marinate. Delicious elegance in each bite.
Ingredients:
  • 4 sprigs fresh rosemary
  • 4 skinless, boneless chicken breast halves - pounded to 1/4 inch thickness
  • 4 slices smoked fontina cheese
  • 4 slices prosciutto
  • 0.5 cup white wine
  • 0.5 cup chicken broth
  • 0.25 cup olive oil
  • 1 tablespoon freshly ground black pepper
  • 4 cloves garlic, halved
  • salt to taste
Instructions:
  • Trim and sharpen the thick ends of the rosemary sprigs using a knife or grater. Submerge the sprigs in water for a minimum of 10 minutes.
  • Preheat your oven to a piping hot 425 degrees F (220 degrees C).
  • Place a slice of fontina and a slice of prosciutto on each chicken breast. Roll them tightly and use a rosemary sprig to secure the rolls.
  • Combine wine, broth, oil, and pepper in a bowl. Transfer the mixture to a medium baking dish. Add rolled chicken breasts to the dish, and place 2 garlic halves under each breast.
  • Bake the chicken in the preheated oven for 25 minutes until the juices run clear. Then, remove it from the baking dish, keeping the sauce, and let it stand for 5 minutes.
  • Pour the remaining sauce into a saucepan and bring it to a boil. Drizzle this flavorful sauce over the chicken before serving. Season the chicken with a pinch of salt to enhance the taste.
