Indulge in Chef John's tangy Bloody Mary gazpacho with creamy Burrata cheese.
Ingredients:
  • 2 pounds vine-ripened tomatoes
  • 0.33333334326744 cup sliced celery
  • 1 jalapeno, sliced
  • 0.5 clove garlic
  • 0.5 cup water
  • 1 lemon, juiced
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons hot prepared horseradish
  • 2 teaspoons hot sauce
  • 1 teaspoon kosher salt
  • 2 teaspoons ground black pepper
  • 6 ounces Burrata cheese
  • freshly ground black pepper to taste
  • 4 drizzles olive oil
Instructions:
  • Blend ripe tomatoes, fresh celery, spicy jalapeno, and pungent garlic until velvety. Strain mixture through a fine-mesh sieve to remove skins.
  • Whisk together lemon juice, Worcestershire sauce, horseradish, hot sauce, salt, and pepper until well combined. Taste and adjust seasonings as needed. Cover the Bloody Mary base with plastic wrap and chill in the refrigerator for at least 2 hours before serving.
  • Pour 1 cup of chilled Bloody Mary base into each bowl. Add a decadent 2 ounces of creamy Burrata cheese in the center. Sprinkle with black pepper and finish with a drizzle of rich olive oil.
