Ingredients:
  • 120 g smoked salmon from sustainable sources
  • ½ a bunch of dill (10g)
  • 300 g cottage cheese
  • 2 lemons
  • 2 large free-range eggs
  • 2 tablespoons creamed horseradish
  • 2 tablespoons tomato ketchup
  • 2 teaspoons Worcestershire sauce
  • olive oil
  • 6 crumpets
  • 1 knob of unsalted butter
  • 150 g raw shell-off prawns from sustainable sources
  • smoked paprika
  • 150 g cooked brown shrimp from sustainable sources
Instructions:
  • Prepare the salmon by cutting six slices and wrapping each around a small sprig of dill. Roll them up and place on a plate in the fridge. Finely chop the remaining salmon and mix it with cottage cheese, most of the dill, lemon juice, and season to taste. Whisk eggs with horseradish, ketchup, Worchester sauce, and pepper, then refrigerate overnight. When ready to serve, fry crumpets in egg mixture until golden. Sauté prawns and shrimp in butter and paprika, then finish with lemon juice. Plate the crumpets topped with salmon mixture, prawns, shrimp, smoked salmon rolls, dill, and paprika. Serve with lemon wedges. Enjoy with champagne or whisky.
