Kickstart your week with a beautiful and healthy blue-eye dish.
Ingredients:
  • 2 oranges
  • 1 garlic clove, crushed
  • 2 large tomatoes, seeds removed, diced
  • 50g olive
  • 18.20 gm extra virgin olive oil
  • 40.00 ml small basil leaves
  • 4 x 175g skinless blue-eye fillets (or other firm white fish)
Instructions:
  • Peel and separate the oranges, letting the juices drip into a bowl. Cut the orange segments in half and transfer to a separate bowl along with 2 tablespoons of juice. Mix in garlic, tomatoes, olives, olive oil, and basil leaves. Gently mix everything together and season with sea salt and freshly ground black pepper. Let the salad sit while you prepare the fish.
  • Preheat a frying pan over medium-high heat. Season the fish with salt and freshly ground black pepper, then lightly spray with oil. Cook for 2 minutes on each side or until fully cooked. Plate the fish and top with the delicious salsa before serving.
