Blueberry and almond muesli bars

Boost your day with this delicious energy bar.
Ingredients:
  • 166.00 gm rolled oats
  • 375.00 ml puffed rice
  • 32.50 gm shredded coconut
  • 20.00 ml white chia seeds
  • 82.50 ml almond kernels, toasted, chopped
  • 2 x 70g packets dried blueberries
  • 125.00 gm almond butter
  • 178.75 gm honey
  • 4.40 gm vanilla extract
  • 80g white chocolate, chopped
Instructions:
  • Prepare your 20cm x 30cm lamington pan by greasing it and lining the base and sides with baking paper, making sure the paper extends 2cm above the edges of the pan.
  • Mix together oats, puffed rice, coconut, chia seeds, almonds, and blueberries in a bowl.
  • In a saucepan over gentle heat, combine almond butter, honey, and vanilla. Stir continuously for 3 minutes until smooth. Mix into the oats and blend thoroughly. Firmly press the mixture into the pan. Chill for 2 hours until set.
  • Cut the mixture into bars and arrange them on a sheet of baking paper. Melt the chocolate in a microwave-safe bowl by microwaving on HIGH for 1 minute, stirring halfway through with a metal spoon. Let it sit for 2 minutes, then drizzle over the bars. Chill in the refrigerator for 15 minutes or until the chocolate is set. Serve and enjoy!
