Easy and delightful blueberry friands.
Ingredients:
  • 100g caster sugar
  • 75g self-raising flour
  • 45g desiccated coconut
  • 30g almond meal
  • 4 eggwhites
  • 125g butter, melted
  • 100g blueberry
Instructions:
  • 1. Preheat your oven to 200C and grease twelve 1/4-cup (60ml) capacity oval friand pans. 2. In a large bowl, mix sugar, flour, coconut, and almond meal. 3. Stir in the egg whites with a wooden spoon until well combined. 4. Add melted butter and stir until fully combined.
  • Divide mixture into pans, top each with 4-5 blueberries, gently pressing them in. Bake for 15 minutes until a skewer comes out clean. Cool on a wire rack before unmolding.
  • To finish, lightly brush friands with a touch of water and sprinkle with additional coconut before serving.
