Delightful blueberry cupcakes with creamy blueberry frosting - a perfect treat for blueberry lovers!
Ingredients:
  • 1 pound fresh blueberries
  • 1.5 cups sifted all-purpose flour
  • 1 teaspoon baking powder
  • 0.125 teaspoon salt
  • 0.5 cup unsalted butter, softened
  • 1 cup white sugar
  • 4 tablespoons whole milk
  • 1 teaspoon vanilla extract
  • 0.5 (8 ounce) package cream cheese, softened
  • 0.5 teaspoon vanilla extract
  • 3 cups powdered sugar, or more as needed
Instructions:
  • Preheat your oven to a cozy 350 degrees F (175 degrees C) and accessorize your cupcake pan with 12 paper liners.
  • Simmer blueberries in a pot over medium heat until most of the water evaporates, stirring occasionally, for approximately 30 minutes. Allow the mixture to cool for 20 to 30 minutes before blending into a smooth puree.
  • Combine flour, baking powder, and salt by sifting them together in a bowl.
  • In a stand mixer, blend butter and sugar until fluffy. Beat in eggs one at a time. Stir in blueberry puree, milk, and vanilla. Gently fold in dry ingredients until combined. Scrape bowl, then mix for 1 more minute.
  • Evenly scoop the batter into the prepared cupcake tin using an ice cream scoop.
  • Bake in the preheated oven for 20-25 minutes or until a toothpick comes out clean from the center of a cupcake. Allow to cool on a wire rack.
  • Use an electric mixer to blend butter, cream cheese, and vanilla extract. Gradually add powdered sugar and 1 tablespoon of blueberry puree at a time until frosting is silky. Frost the cooled cupcakes.
