Blueberry surprise cake with vanilla ice cream - just add boiling water! Perfect for picnics.
Ingredients:
  • 2 cups fresh blueberries
  • 2 teaspoons lemon juice
  • 0.75 cup white sugar
  • 3 tablespoons butter, softened
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup milk
  • 0.5 cup white sugar
  • 1 tablespoon cornstarch
  • 0.5 teaspoon salt
  • 1 cup boiling water
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C).
  • Place fresh blueberries in a deep 8-inch pie pan and generously drizzle them with tangy lemon juice.
  • Cream together 3/4 cup sugar and butter with an electric mixer until creamy. In a separate bowl, sift together flour, baking powder, and 1/4 teaspoon salt. Gradually mix milk and flour mixture into the creamed butter until just combined. Pour batter over blueberries.
  • Mix 1/2 cup sugar, cornstarch, and 1/2 teaspoon salt in a bowl until well combined. Sprinkle over batter and pour boiling water over the sugar mixture.
  • Bake in the oven until a toothpick inserted in the middle comes out clean, about 45-50 minutes.
