Blueberry swirl ice cream

Make a refreshing blueberry ice cream with seasonal fruits.
Ingredients:
  • 8 Free Range Egg yolks
  • 220g caster sugar
  • 750ml thickened cream
  • 250ml milk
  • 150g blueberry
  • 55g caster sugar
  • Waffle cones, to serve
Instructions:
  • In a large saucepan over medium heat, mix together the cream, milk, and vanilla until it reaches a simmer.
  • Beat egg yolks and sugar until they are thick and pale using an electric mixer. Slowly blend in the cream mixture in batches until well combined. Transfer the mixture into a clean saucepan and heat over low heat. Stir constantly for 10 minutes until the custard coats the back of a spoon. Let it sit and cool for 10 minutes before using.
  • Transfer the mixture into a sleek metal pan. Seal it with foil and let it chill in the freezer for about 3 hours until it becomes firm.
  • In a medium saucepan over medium heat, mix the blueberries and additional sugar. Stir and cook for 5 minutes until the blueberries release their juices and the mixture thickens slightly. Let it cool completely.
  • Break up ice-cream with a metal spoon, then blend in a food processor until smooth. Swirl in half of the blueberry mixture to create a marbled effect. Repeat with remaining ice-cream and blueberry mixture. Freeze covered for 3 hours until firm. Serve in waffle cones.
