Create a simple yet decadent blueberry pound cake using yellow cake mix to wow your guests.
Ingredients:
  • 1 (18.25 ounce) package yellow cake mix with pudding included
  • 0.25 cup brown sugar
  • 1 cup low-fat vanilla yogurt
  • 0.5 cup applesauce
  • 0.25 cup water
  • 0.25 cup vegetable oil
  • 3 eggs
  • 1 teaspoon maple flavoring
  • 0.5 teaspoon ground cinnamon, plus more for dusting
  • 1.5 cups blueberries
  • 0.25 cup confectioners' sugar
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a 10-inch fluted tube pan (such as Bundt®) by greasing and flouring it.
  • Combine cake mix and brown sugar in a bowl. Add yogurt, applesauce, water, vegetable oil, eggs, maple flavoring, and cinnamon. Mix on low speed using an electric hand mixer until well combined. Scrape the sides of the bowl and beat on medium speed for 4 minutes.
  • Generously coat blueberries with a fine layer of cinnamon in a bowl. Gently mix blueberries into the batter. Transfer batter into the prepared pan.
  • Bake in the preheated oven for 55 to 60 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Finish by dusting with confectioners' sugar.
