Blueberry-Basil Loaf

Blueberry basil loaf with simple streusel topping for a refreshing and flavorful treat.
Ingredients:
  • 1 1/4 cups fresh blueberries
  • 1 tablespoon Gold Medal™ all-purpose flour
  • 2 1/4 cups Gold Medal™ all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon grated lemon peel
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 6 tablespoons butter, melted
  • 1 teaspoon vanilla
  • 2 eggs
  • 1/4 cup coarsely chopped fresh basil leaves
  • 1/2 cup packed brown sugar
  • 1/4 cup butter, melted
  • 2/3 cup Gold Medal™ all-purpose flour
Instructions:
  • Preheat oven to 375°F. Grease a 9x5-inch loaf pan with cooking spray. In a small bowl, coat blueberries with 1 tablespoon of flour; set aside.
  • Combine 2 1/4 cups of flour, granulated sugar, baking powder, lemon peel, and salt in a large bowl. In a separate medium bowl, whisk together buttermilk, 6 tablespoons of melted butter, vanilla, and eggs until smooth. Mix the wet ingredients into the dry ingredients. Carefully fold in the blueberries and basil, then spread the batter in a pan.
  • Combine brown sugar and 1/4 cup of butter in a medium bowl until nicely mixed. Then, using a fork, incorporate 2/3 cup of flour until the mixture becomes crumbly. Sprinkle the topping over the batter.
  • Bake for 1 hour 5 minutes to 1 hour 10 minutes until a toothpick inserted in the center comes out clean. If the loaf gets too brown, cover with foil for the last 30 minutes of baking. Let it cool for 10 minutes, then remove the loaf from the pan onto a cooling rack. Allow to cool completely for about 1 hour.
