"Bo luc lac - a vibrant French-Vietnamese dish called "shaking beef" with juicy stir-fried beef, fresh watercress, and tomatoes drizzled in tangy vinaigrette."
Ingredients:
  • 2 tablespoons minced garlic
  • 2 tablespoons oyster sauce
  • 1.5 tablespoons white sugar
  • 1 tablespoon fish sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 teaspoon hoisin sauce
  • 1.5 pounds beef top sirloin, cut into 1-inch cubes
  • 0.5 cup rice vinegar
  • 1.5 teaspoons salt
  • 1 red onion, thinly sliced
  • 1 lime, juiced
  • 0.5 teaspoon ground black pepper
  • 2 tablespoons cooking oil
  • 2 bunches watercress, torn
  • 2 tomatoes, thinly sliced
Instructions:
  • Combine minced garlic, flavorful oyster sauce, a hint of sweetness with 1 1/2 tablespoons sugar, savory fish sauce, fragrant sesame oil, umami-rich soy sauce, and tangy hoisin sauce in a bowl. Add in the beef and let it marinate in the fridge for at least 1 hour.
  • Combine vinegar, 1 1/2 tablespoons sugar, and 1 1/2 teaspoons salt in a bowl and whisk until smooth. Mix in the onion and refrigerate for 10 minutes to pickle.
  • Combine lime juice, 1/2 teaspoon salt, and black pepper in a bowl, whisk until the dipping sauce is silky smooth, then pour into ramekins.
  • Heat oil in a smoking-hot wok or skillet. Add beef in a single layer and sear for about 2 minutes. Stir-fry beef for 2 to 4 minutes until it reaches your preferred doneness.
  • Arrange watercress on a serving plate. Place tomatoes on top. Drizzle with vinaigrette, layer beef on watercress, and add onion. Serve with dipping sauce on the side.
