Delicious three bean salad with red bell pepper, artichoke hearts, and feta cheese. Chilled and marinated in zesty dressing for an hour. Perfect as a hearty main dish.
Ingredients:
  • 1 medium red bell pepper, chopped
  • 0.33333334326744 medium onion, chopped
  • 1 (6 ounce) jar marinated artichoke hearts, drained and chopped
  • 1 (12 ounce) can kidney beans, drained and rinsed
  • 1 (12 ounce) can pinto beans, drained and rinsed
  • 1 (12 ounce) can garbanzo beans, drained and rinsed
  • 2 ounces crumbled feta cheese
  • 0.25 cup olive oil
  • 0.125 cup white vinegar or white wine vinegar
  • 0.125 cup balsamic vinegar
  • 1 teaspoon salt
  • 1 teaspoon sugar
Instructions:
  • Combine red bell pepper, onion, and artichokes with kidney, pinto, and garbanzo beans in a large bowl. Let flavors mingle.
  • Whisk together salt, sugar, white vinegar, and balsamic vinegar until fully dissolved in a separate bowl. Slowly incorporate olive oil while whisking. Taste and adjust seasoning to your liking.
  • Drizzle dressing over the bean mixture, ensuring everything is well coated. Cover and chill in the refrigerator for at least an hour before serving. Enjoy cold.
