Savory beef chili with smoky bacon, perfect with a side of cornbread muffins for a satisfying meal.
Ingredients:
  • 1 large yellow onion, chopped
  • 0.5 pound thick-cut bacon, chopped
  • 1.5 pounds ground beef
  • 3 cloves garlic, chopped
  • 1 tablespoon ground cumin
  • 2 cups water
  • 3 (15.5 ounce) cans kidney beans, rinsed and drained
  • 1 (14.5 ounce) can fire-roasted diced tomatoes
  • 0.25 cup chili powder
  • 1 teaspoon liquid smoke flavoring
  • 1 dash hot pepper sauce (such as Tabasco®), or to taste
Instructions:
  • In a large pot over medium heat, sauté onion and bacon until onion is translucent, about 5 minutes. Then add ground beef, garlic, and cumin, and cook until beef is fully browned, 7 to 10 minutes.
  • Combine water, kidney beans, diced tomatoes, chili powder, liquid smoke, salt, black pepper, and hot pepper sauce in a pot. Bring to a simmer and cook until thick, around 1 hour. Optionally skim off any excess grease.
