Indulge in a decadent pineapple custard pie with double the flaky crust.
Ingredients:
  • 4 egg yolks
  • 0.25 cup cornstarch
  • 2 (20 ounce) cans crushed pineapple, drained with juice reserved
  • 1.5 cups white sugar
  • 0.25 teaspoon salt
  • pastry for a (10 inch) double crust pie
Instructions:
  • Start by blending the cornstarch with 1/4 cup of the pineapple juice. In a large saucepan, mix the drained pineapple, sugar, salt, egg yolks, cornstarch mixture, and 1 cup of pineapple juice. Heat on medium, stirring until the mixture slightly thickens and becomes shiny. Remember not to boil it. Take it off the heat and let it cool for 15 minutes.
  • Preheat oven to 400°F (200°C) for a perfectly warmed cooking environment.
  • Place half of the pastry in a 10-inch pie plate to line it. Fill the crust with the cooled pineapple mixture. Add the second crust on top and seal and crimp the edges. Use a fork to make small holes in the top crust in a few spots.
  • Bake until the crust is a beautiful golden brown, for around 35 to 40 minutes. Allow to cool before enjoying.
