Zesty Italian sausage and cheese stuffed banana peppers, baked in flavorful tomato sauce for a simple and delicious meal.
Ingredients:
  • 8 banana peppers
  • 2 tablespoons butter
  • 0.5 cup chopped celery
  • 1 (28 ounce) can crushed tomatoes
  • 1 (8 ounce) can tomato sauce
  • 2 cloves garlic, minced
  • 2.5 teaspoons salt, divided
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 0.5 teaspoon ground black pepper, divided
  • 0.5 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon Worcestershire sauce
  • 1 pound hot Italian sausage
  • 1 pound mild Italian sausage
  • 1.5 cups bread crumbs
Instructions:
  • Trim the tops off the peppers, then remove the ribs and seeds before rinsing them. Chop the edible portion of the tops and set aside.
  • Bring a large pot of salted water to a boil, then simmer peppers until tender but still firm, about 5 minutes. Drain and set aside.
  • In a skillet, melt butter over medium heat. Cook chopped pepper, onion, and celery in the butter until tender, about 3 to 5 minutes. Add crushed tomatoes, tomato sauce, and garlic. Season with 1 1/2 teaspoons salt, basil, oregano, and 1/4 teaspoon black pepper. Let it simmer uncovered for 10 minutes.
  • Heat your oven to 350°F (175°C).
  • In a large bowl, blend Parmesan cheese, egg, Worcestershire sauce, 1 teaspoon salt, and 1/4 teaspoon black pepper. Add hot sausage, mild sausage, bread crumbs, and 1 cup of the tomato sauce mixture. Mix thoroughly.
  • Fill each pepper with the sausage mixture, neatly using a piping bag or sausage stuffer. Transfer the stuffed peppers to a 3-quart casserole dish and generously pour the remaining tomato sauce mixture over the peppers.
  • Bake in the preheated oven until the sauce is bubbling and the sausage is fully cooked, approximately 1 hour. Use an instant-read thermometer to ensure the filling reaches at least 160 degrees F (72 degrees C).
