Classic French beef stew, beef bourguignon, slow-cooked with tender beef, onions, mushrooms, and red wine.
Ingredients:
  • 5 onions, sliced
  • 2 pounds lean beef, cut into 1-inch cubes
  • 1.5 tablespoons all-purpose flour
  • 0.25 teaspoon dried marjoram
  • 0.25 teaspoon dried thyme
  • freshly ground black pepper to taste
  • 1 cup dry red wine, or more as needed
  • 0.5 cup beef broth, or more as needed
  • 1 (8 ounce) package sliced fresh mushrooms
Instructions:
  • In a large, heavy skillet set over medium heat, sauté the onions in oil until tender, about 10 minutes. Remove from skillet and place in a bowl.
  • Brown beef in the skillet, flipping after 1 to 2 minutes. Season with flour, marjoram, thyme, and pepper. Pour in red wine and beef broth and stir. Simmer on low heat for 1 1/2 to 2 hours until tender. Maintain the liquid level by adding more wine and broth in a 2:1 ratio as needed.
  • Add the onions and mushrooms to the skillet. Cook, stirring occasionally, until the mushrooms are tender and the sauce is thick and dark brown, about 30 minutes.
