Elevate classic bananas with honey-glazed slices for a delectable twist.
Ingredients:
  • 340g (2 1/4 cups) plain flour
  • 5.00 gm ground cinnamon
  • 0.63 gm bicarbonate of soda
  • Pinch of salt
  • 155g (3/4 cup, firmly packed) light brown sugar
  • 250ml (1 cup) light olive oil
  • 650.00 gm mashed banana
  • 1 banana, thickly sliced lengthways
  • 57.20 gm honey
Instructions:
  • Preheat your oven to 180C. Grease a 7cm-deep, 10 x 20cm loaf pan with oil and line it with baking paper, leaving some extra on the sides for easy removal later.
  • In a large bowl, sift together flour, cinnamon, baking powder, bicarbonate of soda, and salt. Stir in sugar, then make a well in the center. Add oil, egg, and vanilla, and stir until just combined. Gently fold in mashed banana until just combined.
  • Pour the mixture into the prepared pan, ensuring to smooth the surface. Arrange sliced banana on top and generously drizzle with honey. Bake for 1 1/4 hours or until a skewer inserted into the center comes out clean. Allow it to cool in the pan for 20 minutes, then transfer onto a wire rack to cool completely.
