Savory Filipino dish featuring pork heart, lungs, and liver in a flavorful tomato sauce.
Ingredients:
0.5 poundpork liver
0.5 poundpork lung
0.5 poundpork heart, cut into bite-size pieces
2bay leaves
0.5 cupdistilled white vinegar
salt and pepper to taste
3tablespoons olive oil
2tomatoes, diced
Instructions:
In two pots, gently simmer the pork liver and pork lung in water until tender, around 10 minutes. Drain, cool, and chop into bite-size pieces.
In a large pot over medium heat, mix together the liver, lung, and heart along with bay leaves, vinegar, and water. Season with salt and pepper. Simmer the mixture for 5 minutes.
In a large saucepan over medium heat, sizzle the onion and garlic in olive oil until fragrant, about 5 minutes. Add tomatoes and simmer for an additional 5 minutes. Transfer the pork liver mixture from the pot to the saucepan, then cook and stir together for 5 more minutes. Serve while hot.
