Protein-rich Borlotti bean dip - a must-try!
Ingredients:
  • 80ml (1/3 cup) olive oil
  • 4 garlic cloves, finely chopped
  • 2 x 400g cans borlotti beans, rinsed, drained (Annalisa brand)
  • 80ml (1/3 cup) fresh lemon juice
  • 125.00 ml loosely packed coarsely chopped fresh continental parsley
Instructions:
  • In a small frying pan over medium heat, warm the oil. Add the garlic and stir for 30 seconds until fragrant. Take off the heat and let it cool for 15 minutes.
  • Combine beans, lemon juice, fresh parsley, olive oil, and garlic in a food processor. Blend until creamy. Season with salt and pepper to taste.
