Botwinka (Polish Vegetable Soup with Beet Greens)

Polish Vegetarian Botwinka Soup: A vibrant mix of beet greens, beets, carrots, parsnip, celeriac, leek, potatoes, and hard-boiled eggs.
Ingredients:
2carrots, peeled and diced
1parsnip, peeled and diced
0.5celery roots (celeriac), peeled and cubed
1leek, sliced
cold water to cover
5beets with leaves and stems - beets peeled and chopped, leaves sliced
3potatoes, diced
1cubevegetable bouillon
1tablespoonwhite sugar
1dashlemon juice, or to taste
salt and pepper to taste
3tablespoons heavy cream
2tablespoons all-purpose flour
3eggs, hard boiled
1tablespoonchoppedfresh dill, plus more for garnish
Instructions:
In a large pot, mix together carrot, parsley root, celeriac, and leek. Pour enough water to cover the vegetables and bring it to a boil. Stir in potatoes and a stock cube. Include beet and beet leaves and cook until tender, approximately 25 minutes. Season with sugar, lemon juice, salt, and pepper. Let it simmer for about 5 minutes until flavors meld together. Take the pot off the heat.
In a bowl, whisk together cream, flour, and 3 tablespoons of soup until smooth. Pour the mixture into the pot and stir well. Return the pot to the stove and bring to a boil. Sprinkle in dill and then remove from heat.
Divide the hardboiled eggs into 3 bowls, spoon the soup over the eggs and sprinkle with fresh dill for a finishing touch.
