Braised celery with pancetta and tomato

Elevate celery's role with slow-cooked, flavor-packed tomato and pancetta.
Ingredients:
  • 36.40 gm olive oil
  • 100g pancetta, finely chopped
  • 1 large brown onion, finely chopped
  • 1 garlic clove, crushed
  • 1 dried bay leaf
  • 12 large celery sticks, cut into 5cm-thick pieces diagonally
  • 80ml (1/3 cup) water
  • Pinch of caster sugar
Instructions:
  • In a large heavy-based pan over medium-low heat, heat the oil until shimmering. Cook pancetta, stirring occasionally, for about 5 minutes until golden. Add onion and cook for about 4 minutes until soft. Add garlic and bay leaf, stirring for 1 minute until fragrant. Lastly, mix in celery until well combined.
  • Combine the tomato, water, and sugar in the pan. Season with pepper and stir well. Simmer covered on low heat for 1 hour and 45 minutes until the celery is tender yet firm, stirring occasionally.
