Indulge in a savory Italian beef stew with flavorful veggies and zesty gremolata for a delightful meal.
Ingredients:
  • 4 pounds veal shanks
  • 1/4 cup all-purpose flour
  • 3 tablespoons olive or vegetable oil
  • 1 medium onion, chopped (1/2 cup)
  • 1 medium carrot, chopped (1/2 cup)
  • 1 medium stalk celery, chopped (1/2 cup)
  • 1 clove garlic, finely chopped
  • 1/2 cup water
  • 1/3 cup dry white wine
  • 1 teaspoon salt
  • 1/2 teaspoon dried basil leaves
  • 1/2 teaspoon dried thyme leaves
  • 1/4 teaspoon pepper
Instructions:
  • Prepare veal shanks by trimming excess fat. Coat veal evenly with flour. Heat oil in a skillet over medium heat. Cook veal for about 20 minutes, turning occasionally, until all sides are nicely browned; then drain excess oil.
  • Lay the veal in a large 5- to 6-quart slow cooker and then blend the rest of the ingredients together before pouring over the veal.
  • Slow cook veal on low heat for 8 to 10 hours until it is incredibly tender and easily comes off the bones.
  • Using a slotted spoon, transfer the veal and vegetables to a serving platter. Optionally skim the fat from the veal juices in the cooker and then pour the juices over the veal and vegetables.
