Sweet guava paste fills this light and fragrant lime cake roll for a deliciously tropical twist.
Ingredients:
  • 3 large eggs
  • 0.25 cup water
  • 1 teaspoon freshly grated lime zest
  • 1 teaspoon vanilla extract
  • 1 cup sifted self-rising flour
  • 0.25 cup powdered sugar, or as needed
  • 1 cup guava paste, softened
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C), then generously grease and flour a 15x10x1-inch jelly roll pan.
  • In a small mixing bowl, crack eggs and beat until thick and lemon-colored using an electric mixer. Gradually beat in sugar. Mix in water, lime zest, and vanilla extract until well blended. Gradually mix in flour until smooth. Pour the batter into the prepared pan.
  • Bake in the preheated oven for about 12 minutes until golden brown. Remove, then gently loosen edges with a sharp knife and invert immediately onto a powdered sugar-sprinkled tea towel.
  • Dice the guava paste and transfer it to a microwave-safe bowl. Heat in 20-second increments, stirring each time, until it reaches a spreadable consistency. Caution: The high sugar content will cause it to heat up quickly.
  • Trim the stiff edges off the cake and evenly spread the guava filling. Gently roll up the cake from the narrow end in a jelly roll fashion, using the towel to help guide the rolling process. Allow the cake to cool in the towel on a wire rack for approximately 30 minutes.
  • Gently uncover and dust the top with more powdered sugar to taste. Slice and enjoy.
