Whip up a delicious Mexican breakfast with crispy tortillas, eggs, enchilada sauce, and cheese for a flavorful dish in no time!
Ingredients:
  • 1.5 teaspoons olive oil
  • 2 corn tortillas, cut into small squares
  • 5 eggs
  • salt and ground black pepper to taste
  • 0.25 cup shredded Cheddar cheese
  • 0.5 (14 ounce) can enchilada sauce (such as Old El Paso®)
Instructions:
  • In a large skillet over medium heat, sizzle the tortilla squares in olive oil until they turn crispy, for about 5 minutes.
  • Combine eggs, salt, and pepper in a bowl and gently whisk until well blended; fold in the Cheddar cheese.
  • Cook and stir egg and cheese mixture in the skillet until eggs are firm, approximately 5 minutes. Top with enchilada sauce.
