Brian's bolognese (with spaghetti)

Award-winning Australian spaghetti Bolognese - a must-try!
Ingredients:
  • 30g butter
  • 1 large carrot, diced
  • 2 celery stalks, diced
  • 2 medium brown onions, diced
  • 100g pancetta, diced
  • 1 garlic clove, thinly sliced
  • 500g beef mince
  • 500g pork mince
  • 250.00 gm dry white wine
  • 2 x 500g jars bolognese pasta sauce
  • 150ml thickened cream
  • 750g spaghetti
  • Grated parmesan, to serve
Instructions:
  • In a large heavy-based saucepan over medium heat, melt butter and oil. Add carrot, celery, onion, pancetta, and garlic. Sauté for 10 minutes, stirring occasionally, until the vegetables begin to soften.
  • Lower the heat to a gentle medium-low. Drop in the beef and pork mince. Sauté while using a wooden spoon to break up the mince until it turns golden brown, approximately 10 minutes. Pour in the wine and stir well. Let it all simmer together for 10 minutes.
  • Combine pasta sauce and half of the beef stock in the pan. Increase heat to high and bring to a boil. Cover most of the pan with a lid. Reduce heat to low and simmer for 1 1/2 hours. Add a little bit of the remaining stock every 15 minutes, stirring after each addition.
  • Uncover and sample. Adjust seasoning with salt and pepper, if desired. Pour in cream. Stir gently. Let it simmer, uncovered, for another 20 to 30 minutes until the sauce thickens.
  • Cook the pasta in a large saucepan of boiling salted water according to the package instructions until al dente. Drain thoroughly.
  • Top spaghetti with delicious bolognese sauce and a generous sprinkle of grated parmesan.
