Impress with a succulent beer-marinated prime rib roast, cooked to juicy perfection for a standout holiday feast or celebration.
Ingredients:
  • 1 envelope dry onion soup mix
  • 4 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons maple syrup
  • 1.5 teaspoons Worcestershire sauce
  • 1.5 teaspoons bacon drippings
  • 1 tablespoon mustard powder
  • 0.25 teaspoon hot sauce
  • 1 cup amber or dark beer
  • 1 (5 pound) prime rib roast
  • 2 cloves garlic, cut into slivers
  • 0.25 cup olive oil
  • salt and ground black pepper to taste
Instructions:
  • Prepare the marinade by combining onion soup, 4 minced cloves of garlic, soy sauce, maple syrup, Worcestershire sauce, bacon drippings, mustard powder, and hot sauce in a bowl; stir in the amber beer. Make small slits in the prime rib roast and insert garlic slivers. Put the roast in a resealable bag, add the marinade, and refrigerate for 1 hour. Afterward, let the roast marinate at room temperature for another hour before cooking.
  • Preheat the oven to a toasty 400°F (200°C) and slide a rack into a roasting pan.
  • Take the roast out of the marinade and transfer it to the rack in the roasting pan. Pour the marinade generously over the roast, letting it drizzle into the pan. Massage the roast with olive oil, season with salt and black pepper, then cover with aluminum foil, sealing it tightly to the pan's edges.
  • After baking the roast for 1 hour, uncover the pan, baste the meat with the pan juices, and continue roasting until the meat is browned and the thermometer reads 130 to 135 degrees F (54 to 57 degrees C) for medium-rare, for about 1 more hour.
  • After taking the roast out of the oven, gently cover it with foil and let it rest for 20 to 30 minutes. This will allow the meat's temperature to increase by about 10 degrees to reach 140 to 145 degrees F (60 to 65 degrees C) before slicing.
