German Potato Salad with Bacon, Onions, and Celery Seed - a rich and flavorful dish.
Ingredients:
  • 4 pounds red potatoes, halved
  • 1 pound Bacon, cut into 1/2-inch pieces
  • 1 cup chopped onion
  • 0.25 cup all-purpose flour
  • 0.25 cup white sugar
  • 1.5 teaspoons salt
  • 1 cup apple cider vinegar
  • 2 teaspoons celery seed
Instructions:
  • In a large pot, add potatoes and cover with salted water. Bring to a boil, then simmer covered on medium-low heat until just tender, around 10 minutes. Drain and let steam dry briefly. Cut into 1/2-inch pieces and transfer to a large mixing bowl.
  • In a large skillet over medium heat, cook the bacon and onion together until the bacon fat is rendered and the onion is very tender, about 15 minutes. Add flour, sugar, and salt; cook for 1 minute. Stir in the vinegar and simmer until slightly thickened, about 5 minutes.
  • Drizzle the flavorful dressing over the potatoes, then generously sprinkle with aromatic celery seed and fresh parsley. Gently mix everything together to let the flavors meld perfectly. Serve the dish piping hot and enjoy!
