Filipino dish with chicken, prawns, and ham in creamy coconut curry over sweet rice.
Ingredients:
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon curry powder
  • 2 chicken leg quarters, meat removed and cut into bite-sized pieces
  • 0.5 pound tiger prawns, peeled and deveined
  • 0.5 pound cubed fully cooked ham
  • 2 bay leaves
  • 1 (16 ounce) can coconut milk
  • 1 cup uncooked glutinous white rice
Instructions:
  • In a large skillet over medium heat, sauté the onion and garlic in olive oil until translucent, about 5 to 7 minutes. Stir in curry powder, add chicken, cover, and cook for 2 minutes. Then add prawns, ham, bay leaves, salt, and pepper. Cover and cook an additional 2 minutes.
  • In the skillet, blend coconut milk and rice. Lower the heat, cover, and cook for about 30 minutes until rice is tender, stirring occasionally. Serve while hot.
