Filipino dish with chicken, prawns, and ham in creamy coconut curry over sweet rice.
Ingredients:
1onion, chopped
2clovesgarlic, minced
1teaspooncurry powder
2chicken leg quarters, meat removed and cut into bite-sized pieces
0.5 poundtiger prawns, peeled and deveined
0.5 poundcubed fully cookedham
2bay leaves
1 (16 ounce) cancoconut milk
1cupuncookedglutinous white rice
Instructions:
In a large skillet over medium heat, sauté the onion and garlic in olive oil until translucent, about 5 to 7 minutes. Stir in curry powder, add chicken, cover, and cook for 2 minutes. Then add prawns, ham, bay leaves, salt, and pepper. Cover and cook an additional 2 minutes.
In the skillet, blend coconut milk and rice. Lower the heat, cover, and cook for about 30 minutes until rice is tender, stirring occasionally. Serve while hot.
