Elevate leftover Easter eggs with this colorful casserole!
Ingredients:
  • 8 eggs
  • 1 tablespoon butter
  • 1 cup sliced white onion
  • 2 cups shredded Swiss cheese
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 0.75 cup milk
  • 1 teaspoon prepared yellow mustard
  • 0.5 teaspoon seasoned salt
  • 0.25 teaspoon dried dill weed
  • 0.25 teaspoon freshly ground black pepper
  • 6 slices dark caraway rye bread
  • 2 tablespoons softened butter
Instructions:
  • Place eggs in a single layer in a saucepan and add enough water to cover them by 1 inch. Bring to a boil, then let stand in hot water for 15 minutes. Drain and cool eggs under cold running water. Peel, slice into 1/4-inch thick slices.
  • Preheat the oven to 350°F (175°C).
  • In a skillet over medium heat, melt 1 tablespoon of butter. Sauté the onion until softened and translucent, about 5 minutes. Transfer the onions to a 9x13-inch baking dish. Top with sliced eggs, Swiss cheese, and set aside. In a bowl, combine condensed soup and milk until smooth. Season with mustard, seasoned salt, dill, and black pepper. Pour over the eggs. Spread 2 tablespoons of softened butter on rye bread slices cut into quarters. Arrange them butter-side-up on top of the casserole, overlapping as needed. Enjoy your delicious casserole!
  • Bake in the oven until the bread is golden and the casserole is heated through, about 30-35 minutes.
