Irresistible broc tots - kid-approved, veggie-packed finger food for all ages!
Ingredients:
  • 250g broccoli florets (you’ll need a 350g head)
  • 60g breadcrumbs
  • 90g tasty cheese
  • 2 spring onions, finely chopped
  • 1 Free Range Egg, lightly whisked
  • 20g butter, melted
  • Tzatziki, to serve
Instructions:
  • Preheat your oven to a toasty 230°C (210°C for fan-forced ovens) and get your baking tray ready by lining it with parchment paper.
  • Boil broccoli in salted water for 3 minutes until tender. Drain and place on a paper towel-lined plate to cool.
  • Chop 2 cups of broccoli into fine pieces. In a medium bowl, mix together the chopped broccoli, breadcrumbs, cheddar cheese, spring onions, egg, and melted butter until well combined using a wooden spoon. Refrigerate the mixture for 20 minutes to chill.
  • Shape tablespoonfuls of the broccoli mixture into cylinders with moistened hands and place them on the baking tray.
  • Bake until undersides are golden, about 10 minutes. Carefully flip over (some melted cheese may seep out – gently release any stuck pieces). Continue cooking for 5 more minutes or until bottoms are golden. Let cool slightly and serve with tzatziki.
