Broccoli and pine nut soup

Creamy broccoli soup with golden pine nuts for a rich, nutty flavor.
Ingredients:
  • 18.20 gm olive oil
  • 1 brown onion, finely chopped
  • 1kg broccoli, trimmed, cut into small florets
  • 1020.00 gm vegetable liquid stock
  • 82.50 ml pine nuts
Instructions:
  • In a large saucepan over medium-low heat, sauté onion and garlic in oil for 8 to 10 minutes until they are soft and fragrant.
  • In a pan, combine broccoli, stock, and 2 cups of water. Cover and bring to a boil. Reduce heat to low and simmer, covered, for 15 to 20 minutes until broccoli is tender. Remove from heat.
  • Heat a small frying pan over medium heat. Toast pine nuts, stirring constantly, for 3 to 4 minutes until golden. Add them to the soup.
  • In a food processor or blender, blend the soup until smooth in batches. Season with salt and pepper to taste.
  • Place the soup back into the pan. Gently stir on low heat for 8 minutes or until thoroughly warmed. Ladle the soup into bowls and enjoy!
