Elevate broccoli in a flavorful chunky pesto twist.
Ingredients:
  • 400g spaghetti
  • 1kg broccoli, cut into florets, stems thinly sliced
  • 55g (1/3 cup) pine nuts, toasted
  • 1/2 garlic clove, thinly sliced
  • 185ml (3/4 cup) extra virgin olive oil
  • 60g (2/3 cup) shredded vegetarian hard cheese (or parmesan)
  • Finely grated vegetarian hard cheese, to serve
Instructions:
  • Boil pasta in a pot of salted water until perfectly cooked. Drain and put it back in the pot.
  • While the broccoli is cooking in a saucepan of salted boiling water for 5 minutes or until tender, drain it and let it cool slightly. Blend the broccoli, pine nuts, garlic, and half of the oil in a food processor until a coarse puree forms. Transfer the mixture to a bowl and stir in the shredded parmesan and the remaining oil.
  • Mix the vibrant pesto into the pasta until it's beautifully coated. Season with a pinch of salt and pepper. Serve the delicious pasta in individual dishes and generously sprinkle with grated parmesan cheese.
