"Broccoli-infused cornbread with a moist and tender touch of cottage cheese."
Ingredients:
  • 1 cup broccoli florets
  • 1 tablespoon butter, melted
  • 0.5 cup low-fat cottage cheese
  • 2 tablespoons milk
  • 1 cup cornmeal
  • 0.5 teaspoon baking soda
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C) and generously grease a 9-inch cake pan.
  • Boil an inch of water in a large saucepan. Add broccoli, cover, and steam for about 5 minutes until tender. Drain, rinse with cold water until cool, and squeeze out excess water.
  • In a large bowl, mix melted butter, cottage cheese, egg, milk, and steamed broccoli. In another large bowl, combine cornmeal, baking soda, and salt. Make a well in the center of the dry ingredients and add the broccoli mixture. Stir until fully incorporated. Transfer the mixture into the prepared pan.
  • Bake for about 20 minutes or until a knife inserted in the center comes out clean. Use a knife to loosen the edges of the cornbread, then cut into wedges before serving.
