Broken heart chocolate puddings with mocha sauce

Indulgent chocolate puddings with rich coffee sauce - a comforting treat for the heartbroken.
Ingredients:
  • 300g good-quality dark chocolate, roughly chopped
  • 200g unsalted butter
  • 4 eggs, separated
  • 165g caster sugar
  • 60g almond meal
  • 60.00 ml plain flour, sifted
  • 10.00 gm cocoa powder, sifted
  • 100g white chocolate, chopped
  • 125ml coffee
Instructions:
  • Preheat the oven to 180°C, then grease six 1-cup (250ml) dariole moulds and line a baking tray with parchment paper.
  • Combine 200g of dark chocolate and butter in a saucepan. Stir over gentle heat until melted. Allow to cool slightly before using.
  • In a mixing bowl, combine egg yolks and 1/2 cup (110g) sugar. Beat with an electric mixer until light and fluffy. Stir in melted chocolate mixture, almond meal, flour, and cocoa until well combined using a metal spoon.
  • Using a clean electric mixer, beat egg whites in a separate bowl until soft peaks form. Gradually add the remaining 1/4 cup (55g) sugar while beating until firm peaks form. Lighten the chocolate mixture by folding in a bit of egg white, then gently fold in the rest until combined.
  • Evenly distribute the mixture into the prepared moulds, then place them in a baking dish. Pour enough boiling water into the dish to reach halfway up the sides of the moulds. Bake for 35 minutes or until a skewer inserted into the centers comes out clean.
  • Melt white chocolate in a heatproof bowl over simmering water, ensuring the bowl does not touch the water. Spread a thin layer (about 2mm) of chocolate on the tray using a palette knife, then chill until firm for about 10 minutes. Cut out six heart shapes from the chocolate using a small cutter and chill until serving.
  • In a heatproof bowl, combine the remaining dark chocolate and coffee. Place the bowl over a pan of simmering water, making sure the bowl doesn't touch the water. Stir continuously until the chocolate is melted and the sauce is well combined.
  • Carefully flip the puddings onto plates. Drizzle sauce over them and garnish with chocolate hearts to watch them elegantly melt on the warm puddings.
