Indulge in Tuscany-inspired meringue biscuits.
Ingredients:
  • 250.00 ml toasted almonds
  • 4 egg whites
  • 4.40 gm vanilla extract
  • 1.25 gm ground cinnamon
  • 215.00 gm caster sugar
  • 40.00 ml plain flour
  • Icing sugar, to dust
Instructions:
  • - Preheat the oven to 160°C. - Using a food processor, finely chop the toasted almonds. - Using an electric beater, whisk egg whites in a clean, dry bowl until soft peaks form. - Mix in vanilla extract and ground cinnamon. - Gradually add caster sugar and continue beating until thick and glossy. - Carefully fold in the chopped almonds and plain flour. - Spoon tablespoonfuls of the mixture onto 2 lined baking trays. - Bake for 25 minutes until firm. - Turn off the oven and let the biscuits cool with the door ajar. - Once cooled, dust with icing sugar before serving.
