Indulgent chocolate-infused chili with lean Icelandic lamb. A unique twist on a classic recipe by Bryan.
Ingredients:
1 medium onion, chopped
1poundlean ground lamb
0.5 teaspoonred pepper flakes
0.5 tablespoondried basil
1teaspooncumin
0.125 teaspooncinnamon
2large clovesgarlic, minced
3.5 tablespoons chili powder
0.5 teaspoondried oregano
1teaspoonunsweetened cocoa powder
1teaspoonwhite sugar
1bay leaf
salt and pepper to taste
1 (14.5 ounce) candiced tomatoes with juice
4cups red beans, with liquid
Instructions:
In a large pot, sauté onions and ground lamb in olive oil over medium heat until browned.
Once the onions are soft and the meat is browned, add a delightful mix of red pepper flakes, basil, cumin, cinnamon, garlic, chili powder, dried oregano, cocoa powder, sugar, bay leaf, salt, and pepper to your liking. Let the flavors meld for a minute or two. Mix in tomatoes and beans, then bring the soup to a boil over high heat. Lower the heat and simmer for 15 minutes.
