Bubba's Pretzel Salad

Irresistible sweet and salty dessert: pretzel crusted pineapple treat.
Ingredients:
  • 0.5 cup sugar
  • 1 cup crushed pretzels
  • 1 (8 ounce) package cream cheese, at room temperature
  • 1 (8 ounce) tub frozen whipped topping, thawed
  • 2 tablespoons cornstarch
  • 0.25 cup sugar
  • 1 (8 ounce) can crushed pineapple, drained with juice reserved
Instructions:
  • Combine crushed pretzels, 1/2 cup sugar, and melted butter in a medium bowl until well combined. Firmly press the mixture into the bottom of a 9x9 inch baking dish.
  • Whip together 1/2 cup sugar and cream cheese in a separate bowl until light and fluffy. Gently fold in the whipped topping. Spread the mixture over the pretzel layer in the dish.
  • Combine cornstarch and 1/4 cup of sugar in a small saucepan. Stir in the reserved pineapple juice and bring to a boil over medium heat. Cook for about 5 minutes until thickened. Add crushed pineapple, spread over the whipped layer, cover, and refrigerate for at least 1 1/2 hours until firm.
