Golden, deep-fried chewy rice flour balls filled with sweet mung beans make a delicious Filipino snack.
Ingredients:
  • 1.25 cups water, divided
  • 3.5 ounces green mung beans
  • 2 cups glutinous rice flour
  • 0.125 teaspoon salt
  • 1 quart cooking oil
Instructions:
  • In a pot, bring 1 cup water and mung beans to a boil. Cook over medium heat for about 30 minutes until beans are very tender. Thoroughly mash the beans and stir in 1/2 cup sugar until well combined. Set aside.
  • Combine rice flour, the remaining water, sugar, and salt in a large bowl and knead until a ball forms. Divide the dough into small pieces and roll into balls. Flatten each ball, spoon 1 tablespoon mashed bean mixture into the center, wrap the dough around the beans, and pinch to seal.
  • Preheat oil in a deep fryer or large saucepan to 350°F (175°C). Fry the balls in batches until golden brown, about 5-10 minutes each. Drain on paper towels and serve hot.
