Elevate your menu with a protein-packed Buddha bowl featuring fava beans, Swiss cheese, egg, peas, and yogurt, topped with delicious cinnamon energy bites.
Ingredients:
  • 1 cup raw cashews
  • 6 dates, pitted
  • 1 tablespoon flaxseed meal
  • 0.125 teaspoon ground cinnamon
  • 1 pinch salt
  • 1 tablespoon coconut oil
  • 1 cup water
  • 0.5 cup brown rice
  • 0.5 cup fresh fava beans, shelled
  • 0.25 red bell pepper, diced
  • 0.25 cup frozen peas
  • 0.25 cup diced Swiss cheese
  • 0.25 cup canned artichoke hearts, drained and chopped
  • 2 teaspoons Dijon mustard
  • 2 tablespoons olive oil
  • 1 teaspoon white wine vinegar
  • 1 hard-boiled egg
  • 0.5 cup plain yogurt
  • 0.25 avocado, diced
  • 2 tablespoons pomegranate seeds
  • 1 teaspoon chia seeds
  • 0.25 cup frozen blueberries
  • 3 jasmine flower buds
  • 2 cups water
Instructions:
  • In a food processor, blend cashews, dates, flaxseed meal, cinnamon, and a pinch of salt until thoroughly combined. Then, add coconut oil and blend until mixture is sticky. Shape into gumball-sized bites, place on a baking tray, and freeze for at least 30 minutes. Store in the freezer or refrigerator until serving.
  • In a saucepan, bring water, brown rice, and a pinch of salt to a boil. Lower heat to medium-low, cover, and simmer for 8 minutes. Add fava beans, red bell pepper, and peas and cook until rice is tender, for about 6 more minutes. If needed, drain, but do not rinse. Let it cool completely, around 30 minutes.
  • In a bowl, mix together the cooled cooked rice, Swiss cheese, and artichoke hearts. In a separate small bowl, combine olive oil, mustard, and white wine vinegar to make the dressing. Pour the dressing over the rice mixture and toss well. Finally, transfer the mixture to a bento box along with the hard-boiled egg.
  • In one section of the bento box, elegantly layer yogurt and top with ripe avocado, 2 tablespoons of vibrant pomegranate seeds, and a sprinkle of chia seeds. In a different section, place the energy bites. Chill in the refrigerator until you're ready to enjoy.
  • Mix together fresh blueberries, 2 tablespoons of pomegranate seeds, and jasmine buds in a travel-friendly container. Fill the container with water. Let it chill in the refrigerator for 8 hours or overnight. Enjoy with a bento box.
