Buddy’s crispy-skinned fish

Master crispy fish: invest time for perfect skin and flaky flesh.
Ingredients:
  • 4 x 120 g mackerel fillets skin on, scaled, pin boned
  • 1 lemon
Instructions:
  • Place fish fillets skin side down in a cold non-stick frying pan and turn the heat to high. Season with a pinch of sea salt and black pepper from a height. Cook without moving for 4-5 minutes until the skin is golden and crispy. Flip the fish and cook for 30 seconds on the other side. Squeeze lemon juice in the pan, avoiding the skin, then shake the pan and turn off the heat. Serve with mashed potatoes and steamed vegetables. Enjoy!
