Indulge in a rich and creamy chocolate coffee dessert.
Ingredients:
  • 3 (about 15g) gelatine leaves*
  • 225g dark chocolate
  • 125ml (1/2 cup) prepared strong black coffee
  • 2 egg yolks
  • 300ml milk
  • 200ml thin cream, plus extra to serve
  • 110g (1/2 cup) caster sugar
Instructions:
  • Soften gelatine leaves in cold water. In a bowl set over simmering water, melt chocolate and coffee together, then cool slightly before whisking in egg yolks.
  • In a saucepan over low heat, combine milk, cream, and sugar, stirring until sugar dissolves. Whisk the milk mixture into the chocolate mixture until combined. Squeeze moisture from gelatine, then stir into the chocolate mixture.
  • After cooling, delicately pour the mixture into six 150ml molds. Place in the refrigerator for 6 hours to set.
  • Before serving, briefly dip the bottom of each mold in warm water for 1-2 seconds and then flip them onto a serving plate.
  • Drizzle the remaining cream over the dish before serving.
