Indulge in creamy Filipino Buko Pie, bursting with tender young coconut meat for a decadent dessert treat.
Ingredients:
  • 1 fresh young coconut, drained with meat removed and chopped
  • 2 (12 fluid ounce) cans evaporated milk
  • 1 (14 ounce) can sweetened condensed milk
  • 4 large eggs, beaten
  • 0.25 cup white sugar
  • 1 pinch salt
Instructions:
  • Preheat your oven to 350°F (175°C) for optimal baking conditions.
  • Combine chopped coconut with rich evaporated milk, creamy condensed milk, lightly beaten eggs, sweet sugar, and a pinch of salt in a spacious bowl. Transfer the luscious mixture into a round 3-quart baking dish. Nestle the dish into a sizeable roasting pan and carefully fill the pan with water, stopping halfway up the sides of the baking dish.
  • Place the pan in the preheated oven and bake for about 60 minutes, or until a toothpick inserted into the center comes out clean. Allow it to cool for at least 30 minutes before serving.
