Timeless Scottish shortbread recipe, perfect for the holidays. Long-lasting in airtight storage.
Ingredients:
  • 0.5 cup superfine sugar
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoon ground cardamom
  • 0.5 teaspoon ground ginger
  • 0.75 teaspoon ground allspice
  • 3 cups unbleached all-purpose flour
  • 1 cup butter, softened
Instructions:
  • Preheat the oven to 350°F (175°C) for some delicious cooking ahead!
  • Combine sugar, cinnamon, cardamom, ginger, allspice, and salt in a bowl. Split mixture in half. Set one portion aside. Mix flour and butter into the other half until slightly grainy.
  • Evenly press the dough into an 8-inch square pan. Using a knife, cut the dough into 1x2 inch pieces and prick with a fork. This prevents warping during baking. Sprinkle the reserved sugar and spice generously over the top, ensuring it covers all cuts and holes.
  • Bake for 25-30 minutes in a preheated oven until the edges turn firm and golden. Avoid browning. Let it cool completely in the pan, then break into pieces along the lines for serving.
