Apple cider vinegar mixed with cucumber and onion in a refreshing pickled salad.
Ingredients:
  • 16 cups sliced cucumbers
  • 1 onion, sliced
  • 2 tablespoons salt
  • 1.5 cups white sugar
  • 0.5 cup apple cider vinegar
Instructions:
  • Combine cucumber slices, onion slices, and salt in a bowl. Allow to sit for 2 hours. Remove excess moisture from the mixture.
  • Combine sugar and vinegar in a saucepan over gentle heat. Stir until the sugar completely dissolves, approximately 5 to 10 minutes. Allow the mixture to cool to room temperature.
  • Drizzle the chilled vinegar mixture over the cucumbers and onion, ensuring they are well coated. Place everything in large resealable bags.
  • Freeze until firm.
