Indulgent homemade butter chicken curry, served with rice and naan for an exquisite Indian dining experience.
Ingredients:
  • 2 teaspoons garam masala
  • 2 teaspoons tandoori masala powder
  • 2 teaspoons Madras curry powder
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground cardamom
  • 0.5 teaspoon ground cayenne pepper
  • salt and ground black pepper to taste
  • 1.5 pounds boneless, skinless chicken thighs, cut into bite-size pieces
  • 3 tablespoons butter, divided
  • 1 yellow onion, chopped
  • 4 cloves garlic, minced
  • 2 teaspoons chopped fresh ginger
  • 1 cup tomato puree
  • 1 cup half-and-half
  • 0.25 cup plain yogurt
  • 0.33333334326744 cup cashews
  • 1 bunch fresh cilantro, stems removed
Instructions:
  • Prepare all the ingredients.
  • Prepare a flavorful spice blend by mixing garam masala, tandoori masala, curry powder, cumin, cardamom, cayenne, salt, and black pepper in a small bowl; set aside for later use.
  • In a large bowl, coat chicken evenly with half of the spice mixture.
  • In a large skillet over medium heat, melt 1 tablespoon of butter until sizzling. Add chicken and cook, stirring occasionally, until beautifully golden brown, around 10 minutes. Remove from heat and savor the rich aroma.
  • Melt the last 2 tablespoons of butter in a large saucepan over medium heat. Add the onion and cook until soft and translucent, about 5 minutes. Stir in the rest of the spice mixture, garlic, lemon juice, and ginger. Cook and stir until well combined, about 1 minute.
  • Combine tomato puree with the flavorful onion mixture and cook for about 2 minutes, ensuring to stir frequently. Add in the velvety half-and-half and yogurt. Simmer the luscious sauce on low heat for approximately 10 minutes, stirring often. Take the sauce off the heat once done.
  • Grind cashews in a blender to a fine texture. Blend in sauce until silky smooth.
  • Cover the chicken in the skillet with the aromatic blended sauce. Allow it to gently simmer and thicken for 10 to 15 minutes. Sprinkle with fresh cilantro to add a burst of flavor.
