Creamy spicy tomato curry with tender lamb, served with rice or bread. Delicious and simple to prepare.
Ingredients:
  • 2 pounds boneless lamb shoulder, cut into 1 inch pieces
  • 0.5 teaspoon garam masala
  • salt to taste
  • 2 tablespoons butter, divided
  • 1 onion, chopped
  • 0.5 teaspoon ground turmeric
  • 0.5 teaspoon minced ginger
  • 0.5 teaspoon minced garlic
  • 0.5 teaspoon cayenne pepper, or to taste
  • 1 tablespoon tomato paste
  • 1 cup water
  • 0.5 cup heavy cream
  • 1 tablespoon honey
  • 1 cup chopped fresh cilantro
Instructions:
  • Coat the lamb with a fragrant blend of garam masala and salt. In a large skillet over medium heat, melt 1 tablespoon of butter. Sear the lamb pieces until they develop a golden brown crust, ensuring to stir continuously. Transfer the lamb from the skillet and keep it aside.
  • In the same skillet over medium heat, melt the remaining butter. Sauté the onion until softened and translucent, about 5 minutes.
  • Add turmeric, ginger, and garlic to the skillet, stirring them in. Cook and stir for 1 minute. Combine cayenne and tomato paste, mixing well, then pour in the water. Bring to a simmer, add the lamb back to the skillet, and simmer gently for approximately 20 minutes until the lamb is tender.
  • Combine the cream and honey, then pour the mixture into a serving dish and sprinkle with fresh cilantro for a flavorful finish.
